Yellow rice with sausage, edamame, okra, and pickled onions

It’s been a few weeks since any dinner has appeared on this site. Not that I haven’t been cooking – life just hasn’t been able to accomodate the massive “project” meals I usually post. So the last few weeks have been a mix of quickly put together dishes, which I usually don’t feel are worthy of featuring, for either aesthetic or effort related reasons. However, these are the meals where there is usually the most creativity – no recipes, trying to use up leftover ingredients. Which is what you see here. I wouldn’t have thought to put edamame in a fried rice before, but it sure beats the soggy saltiness of canned beans. Also, berbere powder makes everything better. I need to stock up on more when I go back to DC next month!
